Ingredients

  • 12 oz Bow tie pasta (farfalle)
  • 2 tbsp Olive oil
  • 2 pieces Chicken breasts, boneless and skinless
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 1 tsp Italian seasoning
  • 3 cloves Garlic cloves, minced
  • 1 piece Red bell pepper, thinly sliced
  • 1 piece Yellow bell pepper, thinly sliced
  • 2 cups Cherry tomatoes, halved
  • 1 cup Chicken broth
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp Fresh basil leaves, chopped

Directions

Step 1

Bring a large pot of salted water to boil. Cook the bow tie pasta according to the package instructions until al dente. Drain and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 3

Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.

Step 4

Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside. Slice the chicken into thin strips once it has rested for a few minutes.

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil.

Return the sliced chicken to the skillet and gently stir to combine. Cook for an additional 2 minutes to heat through.

Sprinkle the grated Parmesan cheese and fresh basil over the top before serving.
