  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 3 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 medium, diced Red bell pepper
  • 1 medium, diced Zucchini
  • 1.5 cups Sweet corn kernels
  • 1 cup, halved Cherry tomatoes
  • 0.5 medium, diced Red onion
  • 2 cloves, minced Garlic
  • 3 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Season the chicken breasts with salt, black pepper, and paprika on both sides.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown and fully cooked (internal temperature of 165°F). Remove the chicken from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter.
