Ingredients

  • 2 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 3 tablespoons Olive oil
  • 0.25 cup Balsamic vinegar
  • 1 tablespoon Honey
  • 6 cups Fresh spinach
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Water
  • 1 tablespoon Butter

Directions

Step 1

Place the chicken breasts on a clean surface and season them on both sides with salt, black pepper, and garlic powder.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the chicken breasts.

Step 3

Cook the chicken for about 6-8 minutes per side, or until golden brown and fully cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set it aside on a plate.

Step 4

Reduce the heat to low and add the balsamic vinegar and honey to the same skillet. Stir well, scraping up any browned bits from the bottom of the pan.

Step 5

Let the glaze simmer for 2-3 minutes until it thickens slightly. Turn off the heat and drizzle the glaze over the cooked chicken. Cover the chicken with foil to keep it warm.

In a separate large skillet, heat the remaining 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.

Add the minced garlic and sauté for 30 seconds, or until fragrant.

Add the fresh spinach to the skillet in batches, stirring frequently and letting it wilt before adding more.

Once all the spinach is added, pour in the water and cook for an additional 2-3 minutes until the spinach is tender and bright green. Season with a pinch of salt, if desired.

Step 10

To serve, place a portion of the sautéed spinach on each plate and top with the balsamic-glazed chicken. Spoon any remaining glaze from the pan over the chicken. Serve immediately and enjoy!
