Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces fresh apricots, finely diced
  • 0.25 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 piece jalapeño, seeded and diced
  • 1 teaspoon honey

Directions

Step 1

Preheat your grill or stovetop grill pan to medium-high heat.

Step 2

Pat the chicken breasts dry with paper towels. Brush both sides with olive oil, then season evenly with garlic powder, paprika, salt, and black pepper.

Step 3

Place the chicken breasts on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes.

Step 4

While the chicken is cooking, prepare the apricot salsa. In a medium bowl, combine the diced apricots, red onion, cilantro, lime juice, jalapeño, and honey. Mix until well combined. Taste and adjust seasoning if necessary.

Step 5

Once the chicken has rested, slice it into thick strips or serve whole. Spoon the apricot salsa generously over the top of each chicken breast.

Step 6

Serve immediately with your favorite sides, such as rice, quinoa, or a fresh green salad.
