Ingredients

  • 500 g boneless, skinless chicken breasts
  • 2 tbsp cornstarch
  • 3 tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1 red bell pepper, sliced
  • 200 g broccoli florets
  • 1 carrots, julienned
  • 100 g unsalted walnuts
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 100 ml chicken broth
  • 2 green onions, sliced
  • 1 tsp sesame seeds (optional)
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Cut the boneless, skinless chicken breasts into bite-sized pieces. Toss them in a bowl with 2 tablespoons of cornstarch, 1 tablespoon of soy sauce, and a pinch of salt and pepper. Set aside to marinate for 10 minutes.

Step 2

In a small bowl, mix 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of hoisin sauce, 100 ml of chicken broth, and 2 teaspoons of toasted sesame oil. Stir well and set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir fry for 5–6 minutes until they are golden brown and cooked through. Remove from the skillet and set aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger and sauté for 30 seconds until fragrant.

Step 5

Add the sliced red bell pepper, broccoli florets, and julienned carrots to the skillet. Stir fry the vegetables for 3–4 minutes, keeping them slightly crisp.

Step 6

Return the cooked chicken to the skillet. Pour in the prepared sauce mixture and toss to coat everything evenly. Let it simmer for 2 minutes.

Step 7

Add the unsalted walnuts and stir them through the mixture. Cook for 1 more minute to warm the walnuts.

Step 8

Garnish the stir fry with sliced green onions and sesame seeds, if using. Serve hot over steamed rice or noodles.
