  • 200 grams cherry tomatoes (halved)

  • 3 cloves garlic (minced)
  • 1 medium yellow onion (finely chopped)
  • 100 milliliters dry white wine
  • 200 milliliters chicken stock
  • 2 teaspoons fresh thyme (leaves only)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Season the chicken thighs with salt, black pepper, and paprika on both sides.

Step 2

Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Place the chicken thighs skin-side down and sear for 4-5 minutes until the skin is golden and crispy. Flip the chicken and sear the other side for another 3-4 minutes. Remove the chicken from the skillet and set aside.

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil and unsalted butter to the skillet. Once the butter has melted, add the chopped onion and cook for 2-3 minutes until softened.
