Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 4 medium Russet potatoes
  • 2 tablespoons Butter
  • 1 can (10.5 ounces) Cream of mushroom soup
  • 1 cup Milk
  • 1 medium, diced Onion
  • 2 tablespoons, chopped Fresh parsley
  • 2 tablespoons Grated Parmesan cheese

Directions

Step 1

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 2

Heat the olive oil in a large skillet over medium heat. Sear the chicken breasts for 4-5 minutes on each side until golden brown. Remove and set aside.

Step 3

Peel the potatoes and slice them into thin rounds. Rinse them under cold water to remove excess starch, then pat dry with a kitchen towel.

In the same skillet, melt the butter over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.

Stir in the cream of mushroom soup and milk. Mix until the sauce is smooth and starts to simmer.
