Ingredients

  • 500 grams chicken breast
  • 2 tablespoons cornstarch
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 3 tablespoons water
  • 2 tablespoons vegetable oil
  • 3 pieces garlic cloves, minced
  • 2 medium bell peppers, diced
  • 1 medium onion, sliced
  • 100 grams unsalted cashews
  • 2 stalks green onions, sliced
  • 1 teaspoon sesame oil

Directions

Step 1

Slice the chicken breast into bite-sized pieces and place them in a bowl. Toss the chicken with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch. Set aside to marinate for 10 minutes while preparing other ingredients.

Step 2

In a small bowl, mix together the remaining 2 tablespoons of soy sauce, oyster sauce, dark soy sauce, sugar, and water to create the sauce. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cashews and toast them until golden brown, about 2-3 minutes. Remove the cashews and set them aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the marinated chicken and stir-fry until it is no longer pink and lightly browned, about 4-5 minutes. Remove the chicken and set it aside.

Step 5

Add the garlic to the skillet and stir-fry for 30 seconds until fragrant. Then, add the diced bell peppers and sliced onion. Stir-fry for 3 minutes until the vegetables begin to soften.

Step 6

Return the chicken to the skillet and pour in the prepared sauce. Stir to coat everything evenly and let it simmer for 2 minutes to thicken.

Step 7

Add the toasted cashews and green onions. Drizzle with sesame oil and stir one last time to combine.

Step 8

Serve hot with steamed rice or noodles for a complete meal.
