  • 2 cups baby spinach

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and season them lightly with salt and pepper.

Heat 1 tablespoon of olive oil in a large soup pot over medium heat. Add the chicken and cook for 5-6 minutes, until lightly browned and opaque. Remove the chicken from the pot and set aside.
