  • 4 pieces corn tortillas
  • 1 cup vegetable oil
  • 2 pieces boneless, skinless chicken breasts

  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup chicken broth
  • 1 cup refried beans
  • 1 cup lettuce
  • 1 medium, diced tomato
  • 1 medium, sliced avocado
  • 0.5 cup sour cream
  • 0.5 cup, crumbled queso fresco or feta cheese
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add one tortilla at a time. Cook each tortilla for about 1 minute on each side until golden brown and crispy. Remove tortillas and place them on a paper towel-lined plate to drain excess oil.
