Ingredients

  • 500 g Ground chicken
  • 60 g Sun-dried tomatoes (chopped)

  • 60 g Breadcrumbs
  • 2 tbsp Olive oil
  • 150 g Fresh spinach leaves
  • 200 g Cherry tomatoes (halved)
  • 0.5 whole Red onion (thinly sliced)
  • 2 tbsp Lemon juice
  • 2 tbsp Extra virgin olive oil
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

In a large bowl, mix together the ground chicken, chopped sun-dried tomatoes, crumbled feta cheese, minced garlic, chopped parsley, egg, breadcrumbs, a pinch of salt, and black pepper. Mix until just combined; do not overwork the meat mixture.

Step 2

Form the mixture into 8 equal-sized patties. Ensure they are uniform in size to cook evenly.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the patties in batches, if necessary.
