Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 pound tomatillos, husked and rinsed
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 2 green chiles (mild or hot, canned or fresh)
  • 1 jalapeño, diced (optional)
  • 4 cups chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 cups canned white beans, drained and rinsed
  • 0.5 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 425°F (220°C). Place the tomatillos on a baking sheet lined with parchment paper. Roast for 15-20 minutes, or until they are soft and slightly charred. Set aside to cool.

Step 2

While the tomatillos roast, heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and diced jalapeño (if using), and stir for 1 minute, or until fragrant.

Add the ground cumin, chili powder, oregano, salt, and black pepper to the pot. Stir to coat the onions and garlic with the spices.
