Ingredients

  • 500 grams Chicken tenders
  • 120 grams Dried apricots
  • 200 grams Baby spinach
  • 3 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 1 tablespoon Honey
  • 120 milliliters Chicken stock
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red chili flakes (optional)
  • 0.5 Lemon, juiced

Directions

Step 1

Season the chicken tenders with salt and pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken tenders and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium. In the same skillet, add 1 tablespoon of olive oil and the minced garlic. Sauté for 1 minute until fragrant.

Add the dried apricots to the skillet, followed by the honey and chicken stock. Stir to combine and let it simmer for 3-4 minutes, until the apricots soften slightly and the sauce thickens.

Return the chicken tenders to the skillet, stirring to coat them in the apricot sauce. Cook for another 2 minutes, then remove from heat.

In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the baby spinach and cook for 2-3 minutes, stirring occasionally, until wilted. Season with a pinch of salt, pepper, and red chili flakes if using. Drizzle with lemon juice just before removing from the heat.
