  • 1.5 cups Chicken stock
  • 1 large Preserved lemon (quartered and seeds removed)
  • 1 cup Green olives (pitted)
  • 2 tablespoons Fresh cilantro (chopped)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large tajine or heavy-bottomed pot over medium heat.

Step 2

Season the chicken thighs with salt and black pepper, then add them to the pot, skin-side down. Sear for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.
