  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 ounces Rotini or penne pasta
  • 3 cups Chicken broth
  • 14.5 ounces Diced tomatoes with green chilies (e.g., Rotel)
  • 4 ounces Cream cheese
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and set aside.

Step 2

Heat olive oil in a large skillet or Dutch oven over medium heat. Add the chicken pieces and cook for 5-6 minutes, until no longer pink. Remove the chicken from the skillet and set aside.
