Ingredients

  • 1.5 cups Crushed tortilla chips
  • 4 tablespoons Unsalted butter, melted
  • 16 ounces Cream cheese, softened
  • 1 cup Sour cream
  • 1.5 cups Shredded cheddar cheese
  • 2 cups Shredded cooked chicken
  • 2 tablespoons Taco seasoning
  • 3 pieces Large eggs
  • 4 ounces Diced green chiles (canned)
  • 2 tablespoons Chopped fresh cilantro
  • 2 tablespoons Chopped scallions
  • 0.5 cup Salsa (for garnish)
  • 1 piece Sliced avocado (for garnish)
  • 4 pieces Lime wedges (for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C) and prepare a 9-inch springform pan by greasing it lightly.

Step 2

In a mixing bowl, combine crushed tortilla chips and melted butter. Mix until evenly moistened.

Step 3

Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Set aside.

Step 4

In a large bowl, beat the softened cream cheese until smooth and fluffy.

Step 5

Add the sour cream and shredded cheddar cheese to the cream cheese mixture. Beat until well incorporated.

Step 6

Stir in the shredded cooked chicken, taco seasoning, diced green chiles, cilantro, and scallions. Mix well.

Step 7

Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.

Step 8

Pour the mixture over the tortilla chip crust and spread it evenly.

Step 9

Place the springform pan on a baking sheet to catch any drips and bake in the preheated oven for 50-55 minutes, or until the center is just set and slightly jiggles when shaken.

Step 10

Remove the cheesecake from the oven and let it cool for 20 minutes. Then transfer it to the refrigerator to chill for at least 4 hours or overnight.

Step 11

When ready to serve, run a knife around the edges of the pan to loosen, then carefully remove the springform ring.

Step 12

Garnish the top of the cheesecake with salsa, sliced avocado, and lime wedges as desired.

Step 13

Slice into wedges and serve chilled or at room temperature. Enjoy!
