  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Peel and dice the sweet potatoes into 1-inch cubes. Slice the carrots and celery into 1/2-inch pieces. Chop the onion into small dice. Mince the garlic.

Heat the olive oil in a skillet over medium heat. Sear the chicken breasts or thighs on both sides until lightly browned, about 2-3 minutes per side. This step is optional but adds extra flavor.
