  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1.5 cups chicken broth
  • 6 ounces stuffing mix
  • 2 tablespoons unsalted butter
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 0.75 cup shredded cheddar cheese
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and garlic powder.

Step 2

Heat a large skillet over medium heat and add olive oil. Once hot, place the chicken breasts in the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add chicken broth and bring it to a simmer while scraping up any browned bits from the bottom of the pan.
