Ingredients

  • 1 pound Boneless, skinless chicken breasts

  • 1 whole Red bell pepper, thinly sliced
  • 2 cups Broccoli florets
  • 1 large Carrot, thinly sliced
  • 1 cup Snow peas
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 quarter cup Peanut butter (creamy or chunky)
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Hoisin sauce
  • 1 tablespoon Brown sugar
  • 3 tablespoons Water
  • 2 tablespoons Crushed peanuts (optional, for garnish)
  • 4 cups Cooked rice or noodles (for serving)

Directions

Step 1

Cut the chicken breasts into thin strips and place them in a mixing bowl.

Step 2

Add 1 tablespoon of soy sauce and the cornstarch to the chicken, tossing to coat evenly. Set aside to marinate while you prepare the other ingredients.
