Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 6 cups baby spinach
  • 6 pieces bacon slices
  • 0.5 medium red onion, thinly sliced
  • 2 pieces hard-boiled eggs, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey

Directions

Step 1

Season the chicken breasts with salt and pepper.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for 6-8 minutes per side, or until fully cooked and juices run clear. Set aside to rest, then slice into thin strips.
