  • 2 pieces boneless, skinless chicken breast
  • 12 ounces penne pasta

  • 1 cup Parmesan cheese, grated
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter
  • 1 tablespoon balsamic vinegar (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining. Set the pasta aside.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and 1/2 teaspoon of Italian seasoning. Cook the chicken for 5-6 minutes on each side, or until golden brown and fully cooked through. Remove the chicken from the skillet, let it rest for 5 minutes, then slice into thin strips.

Step 3

In the same skillet, add another tablespoon of olive oil and the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Sprinkle the grated Parmesan cheese over the pasta and gently mix until the cheese melts and coats the dish. Add the optional balsamic vinegar for extra tanginess if desired.
