  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 piece bay leaf
  • 1 cup orzo pasta
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Add the diced onion, carrot, and fennel to the pot. Sauté for 5–7 minutes, stirring occasionally, until the vegetables are softened and fragrant.

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
