Ingredients

  • 12 oz Spaghetti or linguine
  • 2 cups Cooked chicken, shrimp, or turkey (shredded or chopped)
  • 4 tbsp Butter
  • 0.25 cup All-purpose flour
  • 2 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 8 oz Mushrooms (sliced)
  • 1 small Onion (finely diced)
  • 2 cloves Garlic cloves (minced)
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Dry white wine (optional)
  • 1 cup Shredded mozzarella cheese
  • 2 tbsp Chopped fresh parsley

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the spaghetti or linguine in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the onion and cook for 2-3 minutes until softened. Add the garlic and mushrooms, and cook for another 5-7 minutes until the mushrooms are tender and lightly browned.

Remove the mushroom mixture from the skillet and set aside.

In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.

Gradually whisk in the chicken or vegetable broth, ensuring there are no lumps. Add the heavy cream and continue whisking until the sauce thickens, about 3-5 minutes.
