Ingredients

  • 1 pound chicken breast
  • 1 pound shrimp, peeled and deveined

  • 1 large green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 14.5 ounces canned diced tomatoes
  • 3 cups chicken broth
  • 2 cups long-grain rice
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 stalks green onions, sliced for garnish
  • 2 tablespoons fresh parsley, chopped for garnish
  • 0 hot sauce (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Season the chicken breast with 1 tablespoon of Cajun seasoning and cook for 5-6 minutes, until browned on all sides. Remove and set aside.

In the same skillet, add the sliced andouille sausage and cook for 4-5 minutes until browned. Remove and set aside.
