Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 6 medium shallots
  • 4 whole garlic cloves
  • 1 inch ginger
  • 6 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons regular soy sauce
  • 1 whole cinnamon stick
  • 4 units whole cloves
  • 0.5 teaspoons nutmeg powder
  • 2 cups water
  • 2 medium tomatoes
  • 2 medium potatoes
  • 3 tablespoons vegetable oil
  • 1 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons fried shallots (optional, for garnish)

Directions

Step 1

Peel the shallots, garlic, and ginger, then finely chop or blend them to create a smooth spice paste.

Step 2

Dice the tomatoes and peel and cut the potatoes into large chunks. Set aside.

Step 3

Heat 3 tablespoons of vegetable oil in a large pot or Dutch oven over medium heat.

Step 4

Add the spice paste to the pot and sauté until fragrant, about 3-4 minutes.

Add the chicken thighs to the pot and sear until lightly browned on the outside, about 5 minutes.
