  • 6 pieces bone-in, skin-on chicken thighs
  • 4 links Italian sausage (sweet or hot)
  • 0.5 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 8 ounces cremini mushrooms, sliced
  • 0.5 cups white wine
  • 1 cups chicken stock
  • 3 tablespoons red wine vinegar
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon fresh oregano, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels and season generously with salt and black pepper.

Step 3

Dredge the chicken thighs lightly in the flour, shaking off any excess.

Step 4

In a large oven-safe skillet or braising pan, heat the olive oil over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 5–6 minutes. Flip and cook for another 2–3 minutes. Remove the chicken and set aside.

In the same pan, add the Italian sausage links and cook until browned on all sides, about 6–8 minutes. Remove and slice into 1-inch pieces.

Return the seared chicken thighs and sliced sausage to the pan. Sprinkle with the chopped rosemary and oregano.

Bring the liquid to a simmer, then transfer the skillet to the preheated oven.

Bake uncovered for 30 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Remove from the oven, taste, and adjust seasoning with additional salt and pepper if needed.
