Ingredients

  • 2 pieces Chicken breast, boneless and skinless
  • 1 teaspoon Salt

  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 5 tablespoons Butter, unsalted
  • 4 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.5 cup Dry white wine (optional, or substitute with more chicken broth)
  • 0.25 cup Heavy cream
  • 2 tablespoons Lemon juice, freshly squeezed
  • 0.25 cup Parmesan cheese, freshly grated
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Zucchini, thinly sliced
  • 12 ounces Spaghetti or linguine, cooked according to package instructions
  • 2 tablespoons Fresh parsley, finely chopped

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness of about 1/2 inch using a meat mallet.

Step 2

Season both sides of the chicken breasts with salt and black pepper.

Dredge the chicken in flour, shaking off any excess, and set aside on a plate.

In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat.
