  • 1 pound Boneless, skinless chicken breast
  • 4 cloves Garlic
  • 1 cup Unsalted chicken broth
  • 2 tablespoons Lemon juice, freshly squeezed
  • 2 tablespoons Olive oil
  • 4 cups Zucchini, spiraled into noodles
  • 2 tablespoons Parmesan cheese, grated
  • 2 tablespoons Parsley, fresh, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Cut the chicken breast into thin strips or bite-sized pieces. Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 2

Mince the garlic cloves and set them aside.

Step 3

Heat 1 tablespoon of olive oil in a large, nonstick skillet over medium heat.

Add the chicken pieces to the skillet and cook for 4-5 minutes on each side until golden brown and fully cooked. Remove the chicken and set it aside.
