Ingredients

  • 4 links chicken sausages
  • 5 cups baby spinach
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1 yellow onion, thinly sliced
  • 0.5 teaspoons red pepper flakes
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 0.25 cups grated Parmesan cheese (optional)

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

Slice the chicken sausages into 1/2-inch rounds and add them to the skillet. Cook for 6-7 minutes, flipping halfway through, until browned and cooked through. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the thinly sliced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic and red pepper flakes to the skillet. Cook for 1 minute, stirring frequently, until fragrant.

Step 5

Gradually add the baby spinach to the skillet, tossing to coat in the oil and seasonings. Cook for 2-3 minutes until the spinach is wilted.

Step 6

Return the cooked chicken sausage to the skillet and toss to combine. Season with salt and black pepper to taste.
