  • 4 pieces chicken sausages
  • 2 tablespoons olive oil
  • 1 large yellow onion

  • 2 medium carrots
  • 2 medium celery stalks
  • 1 14-ounce can canned diced tomatoes
  • 2 cups low-sodium chicken broth
  • 2 15-ounce cans canned white beans (cannellini or great northern beans)
  • 4 sprigs fresh thyme sprigs
  • 2 leaves dried bay leaves
  • 1 cup panko breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large oven-safe pot or Dutch oven over medium heat.

Step 2

Add the chicken sausages and cook them for 6–8 minutes, turning occasionally, until browned on all sides. Remove the sausages and set aside.

Step 3

In the same pot, add the remaining 1 tablespoon of olive oil, followed by the diced onion. Sauté for 3–4 minutes until the onion becomes translucent.

Add the minced garlic, sliced carrots, and celery, and cook for another 4–5 minutes until the vegetables start to soften.

Stir in the canned diced tomatoes (with their juice) and chicken broth, scraping the bottom of the pot to loosen any browned bits.

Rinse and drain the canned white beans, then add them to the pot along with the thyme sprigs, bay leaves, salt, and pepper. Stir to combine.
