Ingredients

  • 2 tablespoons olive oil
  • 4 links chicken sausage (fully cooked)
  • 1 medium yellow onion
  • 1 medium green cabbage
  • 1 large Granny Smith apple
  • 3 cloves garlic
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon whole-grain mustard
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Slice the chicken sausages into 1/2-inch thick rounds and add them to the skillet. Cook for 3-4 minutes per side or until golden brown. Remove the sausage from the skillet and set aside.

While the sausage cooks, thinly slice the onion, core and thinly slice the cabbage, and core and slice the apple into thin wedges. Mince the garlic.
