  • 1 tablespoon lime juice (for peanut sauce)
  • 1 teaspoon brown sugar (for peanut sauce)
  • 0.5 teaspoon chili paste or sriracha
  • 8 wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Cut the chicken thighs into 1-inch strips and set aside.

Step 2

In a large bowl, mix together 2 tablespoons soy sauce, 2 tablespoons lime juice, 2 teaspoons brown sugar, 1 teaspoon ground coriander, garlic, and salt. Add the chicken strips to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes and up to 2 hours.
