  • 4 pieces chicken breast, boneless and skinless
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 8 ounces white mushrooms, sliced
  • 0.5 cup dry white wine
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides. Dredge them lightly in the flour, shaking off any excess.

Step 2

In a large skillet, melt 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

Add the remaining butter and olive oil to the skillet. Reduce the heat to medium and sauté the chopped onion for 2-3 minutes until translucent.

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Remove the chicken breasts from the skillet and reduce the heat to low. Stir in the heavy cream and cook for 2-3 minutes, stirring constantly, until the sauce is warmed through and slightly thickened.

Return the chicken to the skillet to coat with the sauce. Sprinkle with freshly chopped parsley before serving.
