Ingredients

  • 2 pieces Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 6 cups Mixed greens
  • 2 pieces Nectarines
  • 1 piece Cucumber
  • 0.5 cup Feta cheese
  • 0.25 cup Fresh mint leaves
  • 1 teaspoon Honey
  • 3 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic

Directions

Step 1

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for 6-8 minutes per side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for 5 minutes before slicing into strips.

While the chicken is cooking, wash and dry the mixed greens, nectarines, and cucumber.
