  • 4 pieces Large tomatoes
  • 2 cups Cooked chicken breast, shredded or diced

  • 0.5 cup Mayonnaise

  • 1 tablespoon Dijon mustard
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the tomatoes thoroughly and pat them dry. Cut off the tops (about 1/2 inch from the stem end) and gently scoop out the seeds and pulp with a spoon, being careful not to puncture the sides. Optionally, trim a thin slice off the bottom to make the tomatoes sit flat.

Step 2

Sprinkle a small pinch of salt inside each tomato shell and place them upside-down on a paper towel to drain while preparing the salad.
