  • 1 teaspoon Salt

  • 2 tablespoons Olive oil
  • 4 cups Mixed greens (arugula, spinach, and romaine)
  • 1.5 cups Cherry tomatoes, halved
  • 1 medium Cucumber, sliced thinly
  • 0.25 cup Red onion, thinly sliced
  • 1 medium Avocado, diced
  • 2 tablespoons Fresh basil leaves, chopped
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 2 teaspoons Dijon mustard
  • 1 clove Garlic, minced
  • 3 tablespoons Extra virgin olive oil

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, add the chicken breasts and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for 5 minutes before slicing into thin strips.
