Ingredients

  • 12 ounces Rotini pasta
  • 2 cups Cooked chicken breast
  • 2 cups Cherry tomatoes
  • 1 large Cucumber
  • 1 medium Red onion
  • 1 cup Black olives
  • 1 cup Feta cheese
  • 0.25 cup Olive oil
  • 3 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water, then set aside.

Dice the cooked chicken breast into bite-sized pieces and set aside.

Halve the cherry tomatoes, peel and dice the cucumber, and thinly slice the red onion.
