Ingredients

  • 1 pound Ground chicken
  • 2 large Eggs
  • 1 cup Italian breadcrumbs
  • 0.5 cup Fresh Romano cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 0.5 cup Onion, finely diced
  • 0.25 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 0.5 cup Marinara sauce
  • 0.5 cup Mozzarella cheese, shredded (optional topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, combine the ground chicken, eggs, breadcrumbs, grated Romano cheese, parsley, minced garlic, diced onion, milk, salt, black pepper, oregano, and crushed red pepper flakes (if using).

Step 3

Using clean hands or a spoon, mix the ingredients together gently until evenly combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 4

Transfer the chicken mixture to the prepared loaf pan and gently press it down to form a compact loaf.

Step 5

Spread the marinara sauce over the top of the meatloaf, using the back of a spoon to create an even layer.

Step 6

Place the loaf pan in the preheated oven and bake for 40 minutes.

Step 7

After 40 minutes, if using shredded mozzarella cheese, sprinkle it over the top of the meatloaf and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the internal temperature of the meatloaf reaches 165°F (74°C).

Step 8

Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.

Step 9

Serve warm, garnished with additional parsley if desired. Enjoy with a side of roasted vegetables, mashed potatoes, or a fresh salad!
