Preheat your oven to 375°F (190°C).
Carefully butterfly the chicken breasts, ensuring not to slice them fully in half, and pound them to an even thickness using a meat mallet.
In a medium bowl, mix together the cream cheese, mozzarella, spinach, 1 clove of minced garlic, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper until well combined.

Season the outside of the chicken rolls with the remaining salt, pepper, and paprika.
