Place the chicken breasts on a cutting board. Using a sharp knife, butterfly each breast by slicing it horizontally, without cutting all the way through. Open the chicken like a book and cover it with plastic wrap. Pound the chicken gently with a meat mallet to approximately 1/4-inch thickness.
