Ingredients

  • 12 pieces Rice paper wrappers
  • 300 grams Chicken breast
  • 2 tablespoons Soy sauce
  • 1 tablespoon Olive oil
  • 6 pieces Lettuce leaves
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 15 leaves Fresh mint leaves
  • 15 leaves Fresh cilantro leaves
  • 50 grams Rice vermicelli noodles
  • 500 milliliters Water
  • 120 milliliters Peanut sauce

Directions

Step 1

Start by cooking the chicken. Heat the olive oil in a skillet over medium heat. Add the chicken breast and cook for 6-7 minutes on each side, or until fully cooked through. Season with soy sauce and transfer the chicken to a cutting board to rest.

Step 2

While the chicken is cooking, bring the water to a boil in a small saucepan. Add the rice vermicelli noodles and cook according to package instructions, typically about 3-5 minutes. Drain and rinse under cold water to stop the cooking process.

Step 3

Prepare the vegetables and herbs by washing and drying the lettuce leaves. Peel and julienne the carrot and cucumber. Keep the mint and cilantro leaves ready.

Step 4

Thinly slice the cooked chicken breast into strips once it is cool enough to handle.

Step 5

Set up a rolling station with a large shallow dish of warm water, your prepared vegetables, herbs, noodles, chicken, and rice paper wrappers.

Dip a rice paper wrapper in warm water for 10-15 seconds, just until it softens. Lay it flat on a clean damp tea towel or surface.

On the bottom third of the wrapper, place a piece of lettuce, a small handful of rice noodles, a few carrot and cucumber strips, mint and cilantro leaves, and some chicken slices.

Step 8

Fold the sides of the rice paper over the filling, then roll tightly from the bottom up, tucking the filling in as you roll. Repeat with the remaining wrappers and fillings.

Step 9

Serve the rolls with peanut sauce on the side for dipping.
