Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 2 cups Jasmine rice
  • 3 cups Chicken stock
  • 1 cup Coconut milk
  • 4 pieces Garlic cloves (minced)
  • 1 tablespoon Ginger (grated)
  • 1 piece Cinnamon stick
  • 2 pieces Star anise
  • 2 pieces Bay leaves
  • 3 tablespoons Soy sauce
  • 2 tablespoons Honey
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 stalks Green onions (sliced for garnish)
  • 0.25 cup Cilantro (chopped for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.

Step 2

In a large skillet or Dutch oven, heat 1 tablespoon of oil over medium-high heat.

Step 3

Season the chicken thighs with salt and black pepper. Sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.

Step 4

In the same skillet, reduce heat to medium and add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.

Add the cinnamon stick, star anise, and bay leaves to the skillet. Cook for 30 seconds to release the aromas.

Stir in the rinsed jasmine rice and sauté for 1 minute to lightly toast the grains.

Fluff the rice gently with a fork and remove the cinnamon stick, star anise, and bay leaves.
