  • 2 pieces boneless, skinless chicken breasts

  • 1.5 cups chicken broth
  • 2 tablespoons soy sauce

  • 0.25 teaspoon salt (optional)
  • 0.75 cup cashews (unsalted, roasted)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.

Step 2

Cook the rice: In a medium saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and set aside.
