Ingredients

  • 1 pound Boneless, skinless chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 cup Uncooked white rice
  • 2.5 cups Chicken broth
  • 2 cups Broccoli florets
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Season the chicken breasts with salt, pepper, and garlic powder on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove chicken from the skillet and set aside (it will finish cooking later).

Step 3

In the same skillet, add another tablespoon of olive oil. Stir in the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for 30 seconds, until fragrant.

Step 4

Add the uncooked rice to the skillet and stir for 1-2 minutes to lightly toast the grains.

Step 5

Pour in the chicken broth and stir. Bring the mixture to a gentle boil.

Reduce the heat to low and nestle the seared chicken breasts back into the skillet. Cover with a lid and let simmer for 15 minutes.

After 15 minutes, remove the lid and scatter the broccoli florets over the skillet. Cover again and allow to cook for another 5 minutes, or until the broccoli is tender and the rice is fully cooked.

Step 8

Sprinkle the shredded cheddar cheese over the top and cover the skillet again for 1-2 minutes, allowing the cheese to melt.

Remove the skillet from heat and let it rest for a couple of minutes before serving. Serve warm and enjoy your delicious one-pan meal!
