Ingredients

  • 500 g Chicken thighs (boneless, skinless)
  • 400 g Pumpkin (peeled and diced)
  • 250 g Sweetcorn (frozen or fresh)
  • 1 medium Yellow onion (finely chopped)
  • 3 cloves Garlic cloves (minced)
  • 750 ml Chicken stock
  • 200 ml Coconut milk
  • 2 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro (chopped, for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken thighs with salt and black pepper, then add them to the pot. Sear for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

Step 3

In the same pot, add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic, ground cumin, smoked paprika, and dried thyme, and cook for another minute until fragrant.

Return the chicken to the pot and add the diced pumpkin. Pour in the chicken stock and bring the mixture to a simmer.

Cover the pot with a lid and cook for 20 minutes, stirring occasionally, until the pumpkin starts to soften and the chicken is cooked through.
