Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium saucepan, add the chicken breasts and enough water to cover them. Bring to a boil over medium heat, then reduce the heat and let it simmer for 15-20 minutes, or until fully cooked. Remove from water and allow to cool.
Once cooled, shred the chicken using two forks.
Heat the vegetable oil in a skillet over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic to the onions and sauté for another 1-2 minutes until fragrant.
Stir in the shredded chicken, salt, black pepper, and cumin powder. Mix until the chicken is well coated with the seasonings.
Add the cream cheese to the chicken mixture, stirring until it melts and becomes creamy. Remove from heat and stir in the chopped parsley. Let the filling cool.
Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.
Spoon a generous tablespoon of the chicken filling onto the center of each puff pastry square.
In a small bowl, beat the egg with 1 tablespoon of water to create an egg wash.
Brush the edges of each pastry square with the egg wash, then fold over to form triangles. Press the edges with a fork to seal.
Place the chicken puffs on the prepared baking sheet. Brush the top of each puff with the remaining egg wash.
Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy.
Allow to cool slightly before serving. Serve warm and enjoy!
