Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 1 large yellow onion
  • 4 cloves garlic
  • 1.5 pounds baby potatoes
  • 4 large carrots
  • 1 cup dry white wine
  • 1 cup chicken stock
  • 1 cup crushed tomatoes
  • 2 teaspoons Herbes de Provence
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the chicken thighs on both sides with the Herbes de Provence, salt, and black pepper.

In a large oven-safe skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat.

Sear the chicken thighs skin-side down until golden brown and crispy, about 5 minutes. Flip and sear the other side for 2 more minutes. Remove the chicken from the skillet and set aside.
