Ingredients

  • 1.5 kg chicken pieces
  • 2 tbsp sunflower oil
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 4 potatoes, peeled and quartered
  • 200 g green beans, trimmed
  • 4 tomatoes, diced
  • 500 ml chicken stock
  • 100 ml dry white wine (optional)
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper

Directions

Step 1

Heat the sunflower oil in a potjie pot over medium heat until shimmering.

Step 2

Add the chicken pieces to the pot and brown them evenly on all sides. Remove the chicken and set aside.

Step 3

In the same pot, add the chopped onions and minced garlic. Sauté for 3-4 minutes until fragrant and translucent.

Step 4

Return the chicken to the pot and layer the carrots, potatoes, green beans, and tomatoes on top in that order.

Step 5

Pour the chicken stock and white wine (if using) over the layered ingredients, ensuring the liquid reaches about halfway up the pot without stirring.

Sprinkle the paprika, thyme, salt, and black pepper evenly over the top.

Cover the pot with its lid and reduce the heat to low. Cook the potjie undisturbed for about 1.5 to 2 hours, allowing the flavors to meld and the ingredients to tenderize.

Carefully lift the lid and check if the vegetables are cooked through and the chicken is tender. Adjust seasoning if necessary.
