Ingredients

  • 500 grams ground chicken
  • 100 grams unsalted pistachios, shelled and finely chopped
  • 50 grams breadcrumbs
  • 30 grams grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 units garlic cloves, minced
  • 1 unit egg, lightly beaten
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground chicken, chopped pistachios, breadcrumbs, Parmesan cheese, onion, garlic, beaten egg, parsley, oregano, paprika, salt, and black pepper.

Using your hands or a wooden spoon, mix the ingredients together until well combined.

Step 4

Scoop out about 1.5 tablespoons of the mixture and roll it into a ball. Repeat with the remaining mixture to form approximately 16-18 chicken balls.

Heat the olive oil in a large skillet over medium heat. Add the chicken balls in batches, cooking for 2-3 minutes on each side until lightly browned. Transfer them to the prepared baking sheet.

Once all the chicken balls are seared, place the baking sheet in the oven and bake for 12-15 minutes, or until the chicken is fully cooked and the internal temperature reaches 74°C (165°F).
