Ingredients

  • 500 grams chicken breast
  • 250 grams pineapple chunks (fresh or canned)
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium carrot
  • 100 grams broccoli florets
  • 3 cloves garlic
  • 1 tablespoon ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 100 milliliters water
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Cut the chicken breast into bite-sized pieces. Season with salt and black pepper, and set aside.

Step 2

Dice the red and yellow bell peppers and slice the carrot thinly. Mince the garlic and grate the ginger if not already prepared.

Step 3

In a small bowl, prepare the sauce by mixing soy sauce, oyster sauce, honey, water, and cornstarch. Stir until smooth and set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 5

Add the chicken to the skillet and stir-fry for 5-7 minutes, or until cooked through and lightly browned. Remove the chicken from the skillet and set aside.

Step 6

Add the remaining 1 tablespoon of oil to the skillet. Add garlic and ginger, stir-frying for 30 seconds until fragrant.

Step 7

Add the broccoli florets, sliced carrots, and diced bell peppers to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

Step 8

Stir in the pineapple chunks and cooked chicken. Mix well.

Step 9

Give the prepared sauce a quick stir and pour it into the skillet. Cook for 2-3 minutes, stirring frequently, until the sauce thickens and coats the chicken and vegetables evenly.
